JFI: tried to search for this on Launchpad to find similar bugs, but it times out (reported as bug 611741).
Via Google (http://www.google.de/search?q="Could+not+load+file+or+assembly+gtk- sharp"+site%3Alaunchpad.net) I found e.g. bug 532793, which might help you to fix this.
