Its possible that the crash occured because flac was not installed - when I later tried to install k3b to get CD extracting/burning working it installed flac as part of the dependencies.
Still - if the FLAC encoding library is missing, Sound Juicer should either not have that option available in the preferences menu (or better - grayed out with an explanation what needs to be installed when you select it) or show some error message when trying to encode.
