I can't reproduce this in Maverick with network-manager-gnome
0.8.1+git.20100809t190028.290dc70-0ubuntu3, so marking this as Invalid.
I followed the exact steps you used to edit a wireless connection, and
change the network mask or gateway then apply in mid-edit, and the value
I entered does get applied.
If you find a different set of circumstances where this bug can be
reproduced with the latest version of NM in maverick, please don't
hesitate to set this bug's status back to New.
