I was also affected by this problem, which occured during installing
Linux Mint 9 (based on Ubuntu10.04) and Linux Mint 10 RC (based on
Ubuntu 10.10).

I have used USB disks as installer, which were created by Unetbootin or
the tool found in Ubuntu (and Linux Mint).

When using Unetbootin, you have to press "tab" to get to the command
line options. Adding "nomodeset single" (and removing "quiet splash --")
and pressing "Enter" did the trick (it will then load in Failsafe
graphics mode).

However, sometimes I didn't get to see the Unetbootin (or Grub) screen
were you can choose the different options. One workaround that worked
for a newbie like me, was to open the USB disk in another computer
(Linux or Windows) and simply make the changes on the USB disk itself >
in Syslinux.cfg and loopback.cfg (in the boot/grub/ directory) with a
normal word editing program. I added "nomodeset single" to all the
options (where the "--" appear, which I removed).

Hope this helps anyone who wants to try Linux but gets stuck on a blank
screen.
