The error in the log is:

update-initramfs: deferring update (trigger activated)
gzip: /boot/initrd.img.gz: No such file or directory

dpkg: error processing plymouth (--configure):
 subprocess installed post-installation script returned error exit status 1

This points to a bug in calling update-initramfs, not in plymouth
itself.  Reassigning to the initramfs-tools package.
