I have the same problem. I've been living with it by using the following
work-around.

I first start the music/video/whatever, and then connect my bluetooth
headset. Connecting when playback is in midstream seems to "fix" the
problem.

As Christian Obkircher mentions, if there is no audio playing for a
while (1 or 2 minutes?) or if I connect while there is no audio playing
back and then start playing something, I get the skipping problem. At
this point, reconnecting the headset (after playback has started) will
make things work again.
