You can open a new instance of an application by middle-clicking its
icon in the launcher. If you don't have a middle mouse key, you can
middle-click by pressing both left and right keys at the same time. If
you have a mouse scroll wheel, pressing it should be recognized as
middle-click.
Double-click could interfere with the Spread behavior, and isn't the
intended behavior by design, so marking Opinion.
