I'm not sure I'm experiencing the exact same issue but it seems similar. I also have not found a way to reproduce this and it only happens once or twice a week of daily usage.
I send mail. Sometimes Evolution asks me to restore the an old mail as if it had been closed or it crashed while composing a mail. Yet I had not neither closed evolution nor did I notice some crash. I can restore the mail, yet I find it in my "sent" folder also. Of course now I'm unsure whether it was successfully sent, but most of the times I asked it was indeed sent the first time. I'm not marking this bug as confirmed though, as the symptoms seem a bit different so this may be a different bug.
