This much sounds like a dupe of 3731.  Ubuntu doesn't recognize your
monitor and is picking generic values that don't match your monitor, and
the only resolution it can be sure to work is 640x480.

A workaround is to look in your monitor's documentation and lookup the
horizsync and vertrefresh rates, and then edit your /etc/X11/xorg.conf
file and change those values to the correct ones for your monitor.
Presently, the xorg.conf files you attached just show this generic
monitor setting.

Hopefully for Gutsy we'll both get the automatic detection working
right, and include a gui tool of some sort so folks don't need to hand
edit the xorg.conf, but for now the workaround is the best option.
