I have the same issue with the gThumb icon. The following might be
useful to anyone attempting to fix this bug.

3 systems (Ubuntu 11.04), one: 64bit (nVidia video), two: 32bit
(netbook=intel video, desktop=ati video):

I have resized the Launch pad icons on all three. On the 64bit, and one
32bit (netbook) the gThumb icon can be dragged successfully to the
launcher.

On the 32bit desktop (installed from scratch, identical to the netbook,
same install disk) the gThumb icon does not show. If I copy the
/usr/share/applications/gthumb.desktop file to my home directory
(~/.local/share/applications) [and change permissions to "me," though
that was for editing, it probably doesn't have anything to do with the
problem], then drag that file to the launcher, the icon appears.
