OK, seems a Compiz setting was disabled by default, and enabling it gave
me back Alt+Tab; however, something is preventing me setting the other
familiar shortcut, Alt+Esc. Here is as much info as possible, including
the fact that 2 settings seem to be identical, even though they should
behave differently:

Go to CompizConfig Settings Manager > Window Management, and enable
Static Application Switcher; if that doesn't work, click on that plugin,
and set the desired "binding" to Alt+Tab in the Bindings tab. It should
work once you've enabled that plugin, though, but if you click on it to
see its settings, don't be surprised that the keyboard shortcut for
"Next window" is <Alt>Tab, even though it is actually "Next window (All
windows)" (which is probably set to <Control><Alt>Tab) which pops up the
window list. Setting "Next window" to <Alt>Escape will not automatically
move you between open windows, as you'd expect, but seems to do nothing;
yet, if you set it back to <Alt>Tab, it will once again show you all
open windows (as will <Control><Alt>Tab).

So I got Alt+Tab back, but I actually use Alt+Esc more, so wouldn't mind
getting that fixed now! Cheers
