A workaround might be to add "eth0 manual" to /etc/network/interfaces.
This way network manager shows the interface as "unmanaged" in the UI,
and doesn't touch it.

Unrelated to live LTSP, the same "eth0 manual" approach should also work
for LTSP clients. E.g. fat clients can then have network manager
installed (now we blacklist it) and use it to create e.g. VPN or wifi
connections, while their boot interface remains unmanaged.
