The problem is most probably too slow rendering of complex pages by Ghostscript. For Oneiric two measures got applied to improve the performance of Ghostscript significantly: First, performance-relevant fixes have be done in the PDF interpreter, and second, Ghostscript gets now called with the "-dNOINTERPOLATE" command line option when used as a print filter. This is done by recent changes in the packages ghostscript, cups, foomatic-db, and foo2zjs (others will follow).
See bug 668800. For the Ubuntu version you are using you could at least try whether you get better printing performance by using "-dNOINTERPOLATE". Edit your PPD file(s) (/etc/cups/ppd/*.ppd) adding "-dNOINTERPOLATE" to the Ghostscript command line in there. Search the lines *FoomaticRIPCommandLine: "gs -q -dBATCH -dPARANOIDSAFER -dNOPAUSE -dNO&& INTERPOLATE%B%A%Z -sOutputFile=- -" *End and add "-dNOINTERPOLATE" after "-dNOPAUSE", separated by a space.
