The binary nvidia driver does texture rebinds really slowly. This had been a known issue for a while and is why this is disabled by default.
I'm running nouveau on my 8600GT and it's quite smooth there. I wouldn't suggest using that driver unless you are prepared to deal with instability in the 3D implementation and lack of power management.
