I think, Firefox doesn't use "appmenu-gtk" for their global menu. They have their own "firefox-globalmenu"-package. In my case, there are no problems with the icons in Firefox, so long as I switched on the "Menu have icons"-Option in the gnome-tweak-tool (german firefox-screenshot attached). I personally have only problems with the icons in Inkscape, Gimp and some KDE-programs (Bug #882464: missing icons in dropdown-menus of inkscape and gimp).
