I'm an Ubuntu ignoramus! However, I've managed to replace the rt2800 driver with an rt2860 version from http://www.ralinktech.com/support.php?s=2. I haven't had a kernal panic since, after three days of solid use. With the rt2800 driver I was guaranteed to get one within an hour and often it was after 5 / 10 minutes!
