Ok, this is not a problem with Simple Scan, but rather an issue with
Thunderbird. Thunderbird is explicitly declining to accept attachments
via mailto: links. There is a workaround in xdg-utils (xdg-email is used
to send emails with the preferred mail client). I am closing this bug /
marking it as a duplicate of the relevant bug.

No attachment when thunderbird 3 is set as default client.
