first, I think you experience the same problem when upgrading to
2.6.20-16, your SATA disks seem to work in IDE compatibility mode
(meaning, they are under the reign of the IDE driver instead of the SATA
driver). That's why they show up as hdxy and not as sdxy.

Concerning your changed UUID, this is strange; I would not expect disk
UUIDs to change unless you re-created (deleted and newly defined) your
filesystem(s). If this is not the case, your  grub menu.lst entries
should point to the same root UUIDs. So you could give it a try and
change the UUID of the 2.6.20-16 entry to match the one for the
2.6.20-15 - but I would expect your system won't run stable then (if it
will boot at all, this will depend on your SATA controller and
-settings). If it works, I think performance will be poor.

Concerning your disappeard menu.lst entries, to have them survive future 
updates, you have to place them outside of the region marked
### BEGIN AUTOMAGIC KERNELS LIST
...
a LOT of lines...
...
### END DEBIAN AUTOMAGIC KERNELS LIST
this is documented within menu.lst around the ### BEGIN AUTOMAGIC ..... line
If those lines are missing in your menu.lst, I cannot tell wether this is a 
Guadalinex issue, I don't know this distribution.
