Mike, thanks for the testing. Yes, you are doing everything correctly. I guess Xorg is so messed up already that it doesn't want to play with gdb. Can you try (without starting gdb) to kill the X server with kill -SEGV ? This sometimes forces a core dump. It might be that "apport" interferes with the core dumping, so try disabling it in /etc/default/apport.
