The Feisty Server Add-on CD should just work. I've done it quite a few times. You pop in the disk and it should ask you if you want to install the software. For more info see the Edubuntu Handbook at http://doc.ubuntu.com/edubuntu/handbook/C/ch02s03.html which is also installed with Edubuntu in the Gnome Help Center.
The normal mode of installation for Edubuntu is the Classroom Server CD, which allows you to do either a standalone workstation install or LTSP server install. With either of these if you put in the Classroom Server Add-on CD you will be able to install all the old educational programs we've had in the past plus some additional software we added for Feisty. Another thing to note is that this is the first time in Ubuntu that we've tried to do a 2nd CD. It caused the Desktop CD issue that is the subject of this bug report. These will be fixed in Gutsy (7.10) and I'm working on making the add-on CD installation more user-friendly. Keep in mind that Edubuntu is developed by one Canonical employee (Oliver) and a handful of volunteers like me. We try our best, but we need people to test stuff like this more before releases for obvious reasons. If we had been aware of the issue and able to fix it before release we certainly would have. We've documented the Add-on CD in the Edubuntu Handbook, and we've changed the wording on the Download page on edubuntu.org. In the mean time you can certainly suggest using the Desktop CD from Edgy (6.10) or Dapper (6.06) if somebody wants to use a LiveCD.
