The Canon iP1600 is officially supported by Gutenprint 5.2.7 in 11.10, but this support was dropped in Gutenprint 5.2.8 in 12.04. It seems that the iP1600 support in Gutenprint 5.2.7 did not actually work. Can you contact the Gutenprint authors via their mailing list: https://lists.sourceforge.net/lists/listinfo/gimp-print-devel They can probably tell whether they have removed the iP1600 or whether they removed it accidentally.
