I have posted on the Gurtenprint developer mailing list and got as answer that the Canon Pixma iP1600 support did not actually work in 5.2.7 and therefore got removed in 5.2.8. So we do not have a regression, this printer has never worked under Ubuntu with only the included drivers.
You will have to use a Canon driver for this printer, but note that we cannot fix any bugs or incompatibilities in Canon's drivers. Please contact Canon in case of problems.
