After some more digging around. In /usr/share/applications/ I have three deja-dup desktop files. !?! One of which will display the progress bar whilst backing up if locked to the launcher. The other two will load up the deja-dup preferences window if clicked and if backup is run from the preference window DO NOT display the progress bar.
>From my dash, one of the non-progress bar desktop files is found, if this is locked to the launcher, no progress bar is displayed during backup.
