I did some more research and it's not a configuration issue.  Here's
what's happening.

Example:
I have a channel that XML TV says is on 800.  When it comes time to record the 
show, mythbackend tries to resolve channel 800 to a frequency.  When it can't, 
it simply does not record the show.

If it's in live tv, it will again try to resolve the channel number to a
frequency and when it can't the OCD will be blank.

The workaround to this is to override the frequencies so that all
channels resolve to a known frequency (say channel 3) despite the fact
that the data is coming from a composite source (which shouldn't have a
set frequency).  Unfortunately this is non-intuitive and should be
unnecessary.
