Right, so somewhere along the line you've made these files symlinks to
each other, which is a configuration error. You need to remove
/etc/alternatives/default.plymouth by hand and make it a symlink to
/lib/plymouth/themes/ubuntu-logo/ubuntu-logo.plymouth; after which you
can switch to a different theme using 'update-alternatives
default.plymouth'.
