You have made the plymouth alternative a symlink to itself. This is an
invalid local configuration.
You need to fix /etc/alternatives/text.plymouth to be a symlink to
/lib/plymouth/themes/ubuntu-text/ubuntu-text.plymouth instead. After
fixing this, you should be able to complete the upgrade, and you can
then use 'update-alternatives text.plymouth' to manage your theme
preferences.
