There is now an icc-profiles-free package in both Debian and Ubuntu, which is a subset of the icc-profiles package that only contains DFSG- free profiles. If you can just change the Gnome's dependency from shared-color-profiles to icc-profiles-free then nothing else will need to be done. If the having a package named shared-color-profiles is imperative then we can transition icc-profiles-free to shared-color- profiles.
