Now what about ls /mnt/btrfs/boot?

What I suspect is that you have two different /boot directories, one at
/boot, and one at /@/boot, which is what you see mounted in /boot.  The
latter copy says to use the UUID, but grub is actually using the former
copy, which must say not to.
