During some investigation I found the following difference in the SETUP
phase:

pulseaudio sends:
RTP/AVP/TCP;unicast;interleaved=0-1;mode=record

my iphone sends:
RTP/AVP/UDP;unicast;mode=record;timing_port=59159;events;control_port=56536

The timing_port and control_port are needed for shairport to work.
