Good to see it seems we have a solution, so I edited /etc/default/grub, updating the GRUB_CMDLINE_LINUX_DEFAULT line to:
GRUB_CMDLINE_LINUX_DEFAULT="quiet splash i8042.ignore" and run update-grub. Btw, on kernel parameters docs I see i8042.reset or i8042.unlock might help, but I don't find i8042.ignore - what it is doing?
