OK, it's fixed for me! I found that the new nm-applet works in ways I hadn't seen with the old one - and finally got it to accept the pass-key by switching networks in automatic (not manual) mode. At that point it asked me for a password to set up a keyring - the old one never did that, which is why I didn't have a keyring to delete!
