You should have an entry for your prior kernel that you can boot into,
even after testing the mainline kernel. As well,

provides instructions on removing the mainline kernel entry from your
grub menu.

Not that I am aware of. If you are that concerned, backup your data to external 
media, burn yourself a Live CD/USB, and then perform the requested actions.
