Leonardo: That's a good idea, but it would never work due to the fact that the entire issue here is that Ubuntu allows apps to take control of the entire keyboard.
No special key combinations or multimedia keys are serviced by the window manager when full-screen games are running, so the only key combinations that work are those serviced by the OS and maybe the session manager. The real fix is to mimic the behavior of other OSes in not allowing full-screen applications to completely override the window manager's keyboard handler. Unfortunately this is an X.Org issue, and they're probably never going to fix it because they just don't understand why they should have to. Ubuntu will never be taken seriously as a desktop gaming platform until this is resolved.
