I have to throw my hat into this ring as well, as I have been having a similar problem.
I have Ubuntu Feisty installed on a Compaq Presario S6900NX Desktop, dual boot with Windows XP, and I get the keyboard freeze inevitably after running for a couple hours. The mouse will work and I can interact with windows etc. Copy/paste works so I've been able to leave windows open with commands and returns in them and copy/paste to run commands in a terminal when the keyboard is frozen, but haven't found anything useful yet. Right now I'm just saving very regularly and using Windows when I really need to stay up for a while, which seems really wierd to say. Mouse interactions seems to work completely normally, but trying to send the computer to a clean shutdown hangs somewhere, requiring a manual power cycle.
