Dave, Good point about the grub info file. I'll see about adding something there.
Regarding a default entry in /etc/default/grub: the 05_debian_theme patch already has a number of fallback cases to specifically handle default behavior if certain settings are absent (eg, this is how it pulls the plymouth theme colors).
