ok, i start to observe the behavior with "watch -n 1 acpi -t". it's easy
to see that "Thermal zone 5" is the fan speed!! that explains why it can
switch from zero to 80 and back that fast.

then i chanched:

sudo echo "120:112:100:90:85:80:58:53" > /proc/acpi/thermal_zone/TZ0/trip_points
sudo echo 20 >  /proc/acpi/thermal_zone/TZ0/polling_frequency

wich gives me perfect behaviour: no noice, no fan, until i stress the
cpu realy (with a high performance calculation) !
