Are you aware of any regulation in Mainland China for such things in
software product?

The dialog choosing mirrors itself doesn't imply whether it is a country
list or a region list or a list of random strings.

Do you think the fact that "Taiwan" listed there would be politically
wrong for some people as "Hong Kong" is also listed there now.

A problem could be the fact that we "country mirrors" for China, Hong Kong, 
Taiwan.
Chinese authority and some Chinese people are serious about what can be 
considered country and they may be unhappy with such terminology. But we can 
fix this easily by saying "region mirror" instead.
