Let's say :
- You've got photos with wrong date and time, but you don't know their right 
date and time, and so you want to delete their current (wrong) date and time.
- Or, you just want to erase this information (as programs sometimes erase exif 
data such as GPS information, author, camera, etc.)

In the same idea as you can delete :
- tags/comments, by setting them to "",
- ratings, by setting them to "unrated",
Maybe there should be an option in "Photos > Adjust Date and Time..." not to 
set any date and time.
