This is the way metapackages work, They depend on the packages they are
supposed to bring in, thus when one of those packages is removed, the
metapackage is removed. In Gutsy, apt will install recommends by
default for metapackages, so it may be possible to push some packages to
recommends.
The work around for Feisty would be to remove the packages you want to
remove (including the metapackages), the run apt-get autoremove, but say
No at the confirmation prompt. You will now have a list of all the
packages. Then you can copy/paste the list and apt-get install them.
This will set them to manually installed and they will no longer be
candidates for automatic removal.
It might be useful if you had suggestions about which packages might be
candidates for moving to recommends for when a developer looks at this.
