I have this bug too Some times I can't set default applications neither in "System Setting>Details>Default Applications" nor with "right click on the file and select the default application in properties dialog".
I checked the "mimeapps.list" file in "~/.local/share/applications/", and saw by every try to set default application, it doesn't edited as it should.
