Just to double check are you using Feisty with the 2.6.20 kernel?

It's unlikely the restricted-manager will let you switch between drivers
as NVIDIA only support running the latest possible driver with their
card. As it happens 3 different versions of the NVIDIA driver are
already bundled with Ubuntu 7.04 but to switch between them you will
have to manually pull in a package (and of course any problems you have
will be unsupported). See

further details.

Now this is going to be tricky because removing manually installed
drivers tends to be VERY problematic and is unsupported but before you
switched do you know whether disabling Composite with the 96xx drivers
made a difference?
