The error in your log is:

I'm not sure why you're getting this error. This version of shim-signed
does not pass --target=x86_64-efi to grub-install.

I also don't know why the old postinst script is being called here,
without the new one being called.
It's possible the shim-signed package has not been properly unpacked on
your system and that there's some kind of filesystem corruption in place
here. Can you try to run the following command from a terminal to see
if it resolves the error?
sudo apt-get install --reinstall shim-signed
