Adding ubuntu-gnome to tasksel should be enough to fix this, indeed. This is one of those situations where metapackages don't quite provide enough hints to apt to allow it to resolve alternative dependencies in the way you want. "apt-get install ubuntu-gnome-desktop" from a bare system still won't work well, but you'll have the task option which should.
