I have also experienced the same problem: when using reply to or reply all the to and cc fields are left blank. This problem surfaced with the update of Thunderbird from v24.6.0 to v31.0.
I believe that some plug-ins causes this situation to happen. When I disable all plug-ins before installing the new version of Thunderbird and enable them again after the update everything works fine. I had initially thought that Enigmail caused the problem since a configuration wizard shows up after the Thunderbird update and applies some configuration settings but Agostino does not have the Enigmail plug-in installed. In my case I am running everything in a virtual machine and so I can roll back to an earlier version and give it another try.
