This bug is also present in Debian Jessie (SID). I installed Debian Jessie (SID) on the same Powermac G4 MDD and experienced the same problem. The solution is the same; use a boot parameter to get the graghical interface. However, the boot parameter isn't remembered with Jessie, either.
I'm sure one can add the boot parameter manually to the etc/modules (I think) and get around this issue. I haven't done that yet.
