I think it's possible to add (extra) default boot options in /boot/grub/menu.lst for both the normal boot and recovery mode. Thus, when a new kernel is installed and menu.lst gets updated, these default boot options are added to all Ubuntu entries automatically and you shouldn't have any problem. Please try and see if this fixes your problem.
