Most users are using imap or gmail or other webmail systems.
Other users are using Maildir, /var/spool/mail/<user> mbox styles...right, this 
could be done also with any other software running on Linux, for this I don't 
need wine. I just need skype, or opera, or any other closedsource software 
running on linux. This is no point.

"But it can delete my homedir", no point, because see above. I don't
need wine for it.

The user is doing what he wants: point. He/She installs software, even
from places, without knowing what the software does.

Really, Wine is safe or unsafe, secure or unsecure as any other software
on Linux. It can happen, that during development (this is an example)
evolution is deleting my whole imap folder or whatever app is doing
something to my home directory. This is possible with or without
purpose. It can happen all the time. And also can this happen with
security updates or other things.

Think about wine as of an alpha application.
