This is actually not a problem with apparmor-easyprof-ubuntu-snappy, but with 
the docker-default profile that docker generates (as mentioned in the last 
comment). As such, please adjust these lines in the docker-default:
  ptrace (readby, tracedby) peer="docker_docker_1.3.*",
  signal (receive) peer="docker_docker_1.3.*",

to be:
  ptrace (readby, tracedby) peer="docker_docker_*",
  signal (receive) peer="docker_docker_*",
