This has been annoying me since I reinstalled my laptop following a disk failure recently. I finally ran across the advice to run "dconf reset -f /com/canonical/indicator/datetime/". Voila! The clock reappeared.
Then I changed the settings to add the day of week. The clock disappeared. Same thing if I add date & month. I can repeatedly break/fix the clock simply by checking/unchecking these options.
