I believe this problem may be fixed in Ubuntu 7.10 (Gutsy) OpenOffice.org 1:2.3.0~rc1-1ubuntu2. When I tried to view the font selection list it showed me all available fonts on my system. Though this problem doesn't always show up for me in any case... :-\ Can you try to test with the updated version in Gutsy and let me know if it works for you?
